Description

What kind of knife is this?

The Japanese slicer. A more specific knife shape ideal for portioning, trimming and finely slicing large cuts of meat, roasts, poultry or fish. The long and thin shape greatly reduces drag and is ideal to make long drawing cuts to thinly slice protein with high precision.

Care Instructions

This is a Semi stainless steel knife. Semi stainless is in between carbon steel and stainless steel, not enough chromium content to be fully stainless but much less fast in oxidising than carbon steel. You can expect semi stainless to be easier in use than carbon, it will oxidise but in a more controlled way than carbon steel. It will in most cases sharpen easier than stainless and responds better to touch ups. It is however still important to store your knife dry and clean, wipe it dry now and again when using, never let it air-dry after washing, no dishwasher and avoid extremely hard products like frozen foods or bones ect.
