Description

The KH series is a wonderfully pleasant line of knives, with high end fit & finish and made with attention to detail. In Seki, these blades are stamped and heat-treated by local artisans, then meticulously ground, sharpened and completed by the KH brothers. What stands out most is the grind and the refinement of the surface work. The grind is slightly asymmetric—favoring right-handed users—with remarkable precision and a subtle convex on the right side. The cutting performance is smooth and effortless.

The Western ‘Yo’ handled line is always beautifully polished, with thoughtfully rounded handles, spine, and heels, ensuring comfortable handling. These knives are made with high-performance stainless steel. Great balance of hardness for monosteel blades—tough without being fragile—and carry the solid, confidence-inspiring feel characteristic of monosteel construction. Sharpening is a pleasure, with smooth feedback and clean edge formation.

What kind of knife is this?

An equally all-round knife as the gyuto but more orientated to homestyle cooking. Incredibly versatile on its own, easy to use, nimble and suitable for a wide variety of cutting tasks. The bunka is a version of the santoku but with a Kiritsuke tip. This style tip will excel in more delicate work while it still retains the all-purpose functionality of the santoku.
