Description

Morihei is a knife and whetstone supplier located in Asakusabashi, Tokyo. They have been a part of the industry for over 100 years, including the predecessor of Morihei “Oguro-Morihei-Shouten“. At one point in time, more than 20 groups of blacksmiths and sharpeners were working exclusively under Morihei. They are one of the only companies in Japan with a long-standing history of relationships with blacksmiths and whetstone and natural stone makers that still exists today. The president, Mr. Akimitsu Oguro is highly regarded and extremely well educated on the “Kanto” knife style. He acts like a gatekeeper for this specific style. Educating craftsmen on the old techniques used to keep not only double but also single bevel knives from the Tokyo region alive.

What kind of knife is this?

The Deba is the traditional Japanese fish filleting knife. A classic shape that’s been around for centuries. It’s made for breaking down fish and small debas can be used for poultry too. The single-bevel geometry makes it super efficient for filleting, it's strong, low in friction, and capable of taking on an incredibly sharp edge.
It might take a little adjustment in technique if you’re used to western filleting knives, but the results are often worth it. A Deba is sturdy enough to handle fish bones, yet sharp enough to give you clean, precise cuts which means better texture, better taste, and better quality all around.

Care Instructions

The traditional Japanese fish filleting knife. A very old knife shape used for breaking down fish and often poultry. Very efficient in filleting due to their single bevel geometry designed to be strong, reduce friction and have a very keen edge. While it takes a small adjustment in technique the results are often much better compared to using a western filleting knife. Strong enough to cut through fishbones and a much sharpen edge resulting in higher quality cuts essential for taste, texture and quality of the produce.
