Petty knives (Utilty) have a similar profile as the Gyuto but smaller, commonly ranging from 12 to 15cm. A shape most often used next to any larger all-purpose blade (gyuto & santoku) although there are many households where this is the go-to knife. Very suitable for the smaller cutting tasks such as cleaning, portioning and peeling fruits and vegetables and cleaning smaller cuts of meat or fish.

Pairing knives are more used for in-hand tasks such as peeling, trimming, scoring and cleaning and fruit or vegetable.

The Hitohira Futana series are a great introduction into the world of Japanese kitchen knives. They offer very high quality for a reasonable price.

The Futana S3 line is made with a Yasuki Silver #3 (Ginsan) stainless core-steel and a softer stainless cladding. Full stainless blades with great performance and easy maintenance. The S3 line is made with Nashiji (rustic) and with Migaki (polished) finish.

The Futana SB line is made up of a Yasuki Blue (Aogami) Super carbon steel core and a softer stainless cladding. Very pleasant in maintenance with only the core steel being sustainable to oxidisation. The Blue Super steel will hold a great edge for a long time. The SB line is made with either Migaki (polished), Kurouchi Nashiji (dark & rustic) and Kurouchi Tsuchime (dark & hammered) finish.
